College Cooking

I love to eat. I love good food, I love trying new dishes. I am in no way a picky eater-- I'll eat just about anything. However, if I could eat sushi and filet every single day, I definitely would. Since moving off campus, I have a much more limited on-campus meal plan. This means that I go grocery shopping and cook very often in my town house kitchen.
Before this year, I have never really cooked anything. I could do the basics like grilled cheese, mac 'n cheese, sandwiches, etc. One issue is that I really don't enjoy cooking. My mom is an amazing cook and has always pushed for me to try her recipes and try learning but I just can't get into it. However, my need for good food has made me try to learn how to cook.
We don't have the best appliances and we are grill-less so I invent different things each night that are quick and easy but still delicious.
The other night, we prepared chicken stir fry. A really simple dish for college students. All you need is boxed rice and simply follow the directions on the box.
Then you need chicken breasts. Make sure they are thawed; place them into a pan with a little bit of olive oil and let them cook thoroughly. Once cooked, cut the chicken breasts into bite-size pieces in the pan.

This is where the best invention every comes into play. Green Giant stir-fry teriyaki frozen vegetables. All you do is add the veggies to the pan with the chicken and then empty the contents of the teriyaki sauce into the pan and let it simmer. Once all cooked, you have a delicious stir-fry meal which can feed at least 2 if not 3 people. I've also tried this with steaks as well and I love it that way too! Just an easy, inexpensive but delicious meal prepared quickly! What is your go-to meal to prepare when you need something quick, easy, but delicious? Have a fabulous day!
Yours,
sCe

Love this quick & easy recipe! I'm a college student as well, and it's so hard to find time to cook a actual meal. Keep the ideas coming!

I have this same issue cooking in my apartment with the older appliances and basically zero counter space. I use a LOT of frozen vegetables. The perdue individually wrapped chicken breast are great too. They're a couple dollars more, but you can just pull out one or two and they thaw in no time if they've been frozen. Plus they're already trimmed. My mom turned me on to those!

I remember being in the same situation of having limited cooking resources! Sarah's right-- the perdue chicken breast are great in using only what you need!
