Summer Wind Cooks








I'm back on the cooking grind. I mean, if I don't blog about what I cook, did it actually happen? No, probably not. 

This time we kind of improvised. We did a feta, balsamic and strawberry salad followed by oriecchiette pasta with tomatoes, chicken sausage, onions and broccoli. It actually was delicious! 

This is super simple. But let's be honest, any recipe I ever post will be simple. If I am capable of making it, pretty much anyone can make it. Here's what you do:

1. Chop sausage and sautee in a pan with evoo. 
2. Once fully cooked, set aside and then sautee onions and broccoli in evoo. 
3. Boil water and cook pasta
4. Combine sausage, broccoli, onions into one pan. Add evoo, parmesean cheese, diced grape tomatoes and salt and pepper to taste. Let this warm while in the pan. 
5. Once the pasta is finished, combine with sausage, broccoli, onions and tomatoes. 

That's it! Super quick and simple but has a lot of flavor, is very filling and makes plenty of leftovers. I think normally you wouldn't add the tomatoes, but we did to add some color-- we are all about aesthetically pleasing food, too! 

I don't exactly love cooking, but I do love the fact that you can just make things up and improvise as you go. Of course there are certain dishes that you have to follow a set of directions/recipes, but my favorites are the ones that are just improvised! This dish is perfect for a college gal or a young 20-something! 

There is something so satisfying when you are plating the food and it looks good and tastes good. It makes me feel domestic and grown up. It's also so much better when you are drinking wine and catching up with friends whilst doing the cooking. Kind of silly, but hey, whatever works!
