Recipe: Easy Roasted Tomato and Burrata Pasta


I originally shared this recipe in 2020. Exactly 3 years later (almost to the day), I wanted to update this recipe to share some of the small tweaks I have made to really perfect this dish. It is something we have so many times every summer. It's quick and easy. Plus, this is a pretty clean ingredient meal and you can customize it however you like. 

Here's what you will need:
- Burrata (I get it from Trader Joe's)
- Grape tomatoes (or a mix of tomatoes is fun!)
- Minced Roasted Garlic
- Good Olive Oil (I like this one)
- Good balsamic vinegar (I like this one)
- Salt
- Pepper 
- Basil 
- Pasta or spaghetti squash

1. Preheat your oven to 400. Toss grape tomatoes in olive oil, minced garlic, salt, and pepper. Spread out your grape tomatoes on a baking sheet and bake for 45 minutes to an hour, tossing throughout. 

2. Boil water and make pasta of your choice.

3. Add the roasted tomatoes on top of your pasta and use some of the juice to pour over as well. 

4. Add half of a ball of burrata. 

5. Chop up some fresh basil and garnish. 

6. Top with good olive oil, salt, pepper, and balsamic vinegar and voila! I say 'good' olive oil and balsamic vinegar because these two flavors really shine in this dish. 

This is not necessarily a healthy recipe, but the flavors are out of this world. Even though the burrata is heavy, the rest of the ingredients taste so light, fresh, and summery. 

This is also something you could easily make for a dinner party. It's so quick to make, and you can make large amounts easily. It presents beautifully, and it's delicious. It tastes like something you might order at a nice Italian restaurant.  

You can also make this with spaghetti squash which we have done many times and love! You could also substitute the pasta for a sliced and toasted baguette to dip into the burrata/tomatoes (more as an app) or could do this mix on top of an arugula salad or even with grilled chicken if you want to do something lower in carbs!

I am a plate/dish collector, and out of all of the dishes we have, these are the ones that get the most use. We eat most of our weekday meals out of these bowls. They are a good plate/bowl hybrid, not only wonderful for pasta but pretty much anything else you could make! I really want these pasta bowls- they are stunning!

Finally made this recipe after saving it when it was posted and it was just incredible (used spaghetti squash instead of pasta)! My fiance's response was "you could sell this in a restaurant," so it's safe to say it was a hit with us! Also used the TJ's burrata (the best) and somehow the entire container is gone...oops!
