- 2 eggs
- 1 cup milk
- 3 tablespoons butter
- 1 teaspoon baking powder
- 3/4 cup flour
- 1/2 teaspoon salt
- 3 tablespoons brown sugar
- Melt butter and add to eggs and milk, mixing well.
- Add baking power, flour and salt and mix. (leave the lumps somewhat apparent, it makes them better!)
- Pour enough into a hot non stick skillet so that it is about 4 inches in diameter.

Pamela's is the best! It will definitely be something I miss once I graduate. Love them even more when there is chocolate, bananas, and whipped cream on the inside!

The best and easiest pancake recipe is a ratio of 1 cup plain flour to 1 cup of milk and 1 egg.
Put flour in a bowl, make a well.
In a jug mix milk and egg and pour over flour then mix well with a whisk.
They are best if you put a good dollop of real butter in the pan then pour in the batter and swirl till pan is covered thinly. Let cook until it changes colour, then flip it over and cook other side briefly.
Slide onto plate and top with maple syrup, or lemon and sugar, or Nutella and banana, etc. if you want it sweet, or make it into a savoury pancake with a savoury mince, or ham and cheese etc. These can also be made and filled, rolled into cylinders and stacked in a dish with a white sauce toped with cheese, or a tomato based sauce toped with cheese and baked in the oven till heated through and cheese has browned and bubbled.
I have a similar recipe but I love yours - it is so much better. Had it for breakfast this morning.
