Quick, Easy, and Healthy Greek Salad Recipe

Popping in this Sunday to share a really amazing salad I made the other day. It's not that it's really anything groundbreaking or special, but it was just absolutely delicious! I made a big batch and this made enough for lunch, dinner, and a side salad the next day. My version is vegetarian, but you could totally add chicken, etc. if you wanted to! 

What you'll need:
  • 1 bag of Taylor Farms Greek Chopped Salad (I got this from Target)
  • handful of Feta Cheese
  • heaping spoonful of Hummus
  • 1/2 of an Avocado
  • Veggies (I used: red onion, cucumber, red and yellow peppers.. basically anything you love and have in your fridge)
The chopped salad kit is really key here. You could honestly just eat that because it's good by itself (it already has cabbage, romaine, broccoli, green olives, green onion, parsley, and celery. I toss out the pita chips it comes with, though. 

However, I really like to 'fix it up' which makes more of a complete meal out of it and makes it able to feed more people or more meals that way! 

All you need to do is finely chop up all of your veggies and add everything to a big bowl. Toss in half of a chopped avocado and top with a heaping spoonful of hummus and a sprinkle of feta cheese. Then toss with the dressing packet that it comes with (you could also use your own dressing as a healthier option)... you don't even need to use the whole packet. I use about half a packet.

Then, I like to mix it all together (even the hummus). It holds up nicely (and stays crunchy) for a solid 24 hours. It is SO good and full of flavor. I could not recommend this more, especially if you struggle with meal prepping during the week since the chopped salad portion is already chopped up and ready to go! You could also do a portion with grilled chicken for dinner, then take the leftover chicken and salad and turn it into a greek wrap the next day!
