Labor Day is officially behind us, and the PSL has been back for a week, so it's only fitting we celebrate with a fun fall recipe. I know, I know, you are probably thinking 'too soon'!! But I have a good reason for this! Spice cake mix seems to always sell out by the time you actually have the craving for fall baked goods. I have no idea why, but for the past few years, it has been nearly impossible to find at the grocery store by the time October rolls around!
So, this is your sign to stock up on spice cake mix while you can! I am not a baker, but I have made this recipe since college. If I can do this, anyone can. I got this recipe from a blogger I loved around 2010, in the heyday of blogging! I won't call her out since she has long shut down her website, so I'm not sure she would want the mention, but it was one of my favorite blogs!
Ingredients:
- 1 box spice cake mix
- 1 can of pumpkin (15oz)
- Chocolate Chips (I like the Ghirardelli brand)
These can be made as cookies, muffins, or loaves. The 'dough' is sticky, so it's a bit hard to work with for cookies, but I prefer them as cookies or mini muffins.
1. Preheat oven to 350 degrees.
2. Mix the spice cake mix, can of pumpkin, and chocolate chips in a mixing bowl.
3. Bake for 15-20 minutes (the loaf usually takes longer than the cookies).
They are moist and dense, with a cake-like texture rather than a traditional cookie texture. The spice cake mix gives them that wonderful fall flavor, and the chocolate chips make them such a treat.

I use pecans instead of chocolate chips also have added toffee bits both are a nice addition to the muffins.
