My husband is the cook in the house and he is a GOOD cook. He makes us so many wonderful things. I can cook but it has only been in the past few years that I have really even become interested in it so I have been learning slowly but surely.
I am a crockpot gal because that is EASY! It's also almost always delicious if a crockpot is involved! I first saw this recipe for white chicken chili from Half Baked Harvest. I liked the recipe a lot but there were a few tweaks that I wanted to make. After making it a few times, I eventually created something that really isn't white chicken chili at all. Instead, I call it a very uncreative name of 'creamy chicken taco chili' because it really does taste like a flavorful chicken taco in the best way imaginable. I love the creaminess of the broth but it has such a depth of flavor due to all of the seasoning. I try to add as many vegetables as possible for flavor, color, and health! I also love the freshness that the chopped cilantro and green onion add and it also makes such a pretty garnish! It's the absolute perfect thing to make for a crowd and you know what? It is SO easy!
This will serve about 8-12 people. I bought all of my ingredients from Walmart grocery delivery that I was able to order online. Here's What You'll Need...
- 1 can black beans (drained)
- 1 can navy beans (drained)
- 1 block of Cream Cheese (8 oz)
- 1 can of corn (15 oz, drained)
- 1 can diced tomatoes with green chiles (10 oz)
1. Add in chopped poblano pepper, red pepper, white onion, and minced garlic to bottom of crock pot. Add in chicken on top. Add 1 full taco seasoning packing, half of a ranch seasoning packet, and 1 block of cubed cream cheese.
2. Top with 32 oz. of chicken broth.
3. Set crockpot on low for 4-5 hours. Stir intermittently. You want chicken to reach an internal temperature of 165 degrees. Once the chicken is fully cooked, you want to remove it from the crockpot and shred it with a fork. Then add it back into the crockpot.
4. Add in your drained can of corn, half of a can of black beans (drained), and half of a can of navy beans, drained. Then keep on low for another 30 minutes to an hour before serving.
Garnish With:
- Cilantro
Other ideas: avocado, crushed tortilla chips, sour cream, jalapeno
Some recipe notes:
- Cube the block of cream cheese before adding it in the crockpot. The cubes will melt faster and become easier to mix once warmed.
- You can do the full can of both of the beans, I just personally prefer less beans!
- I want to try grilling corn on the cob and then cutting it off of the cob and adding it to the soup for a fresher flavor- that just takes a little more planning.
- I haven't tried it with zucchini yet, but I think that's another vegetable that would go well cubed and added in for even more vegetables! I also think I'll add in a green pepper next time!
- If you like spicy, I think some chopped jalapeno added in while cooking would add a nice kick.
- This freezes really nicely and makes for delicious leftovers!
- If you are watching your calories or want to cut back on the dairy, I think this could be delicious even by omitting the cream cheese altogether.
- By using less broth, you could turn this into a dip of sorts OR pour it over tortilla chips for a deluxe nachos situation!

You can roast corn kernels in a dry skillet until they're slightly charred. It works surprisingly well and is super easy!
