Recipe: Egg Roll Soup

Soup season is not yet upon us, but it's just around the corner, so I wanted to share my egg roll soup recipe with you in advance, so you'll have it on hand for the season. I made this for the first time last year, and it was sooooo good and so easy to make. Years ago, I made an egg roll in a bowl recipe that was very similar to this, and after making this, it is better as a soup! I look for any way to add cabbage to a meal. I love cabbage. It's one of my favorite things to eat. This soup is hearty and savory. The best part of this, though, is that it's a one-pot recipe that comes together in under 30 minutes. It's great for a quick weeknight meal, and it freezes well for enjoying later. 

Ingredients
1 lb ground pork
1 bag coleslaw mix
1 finely chopped yellow onion
3 finely chopped celery sticks
Minced garlic (a few cloves)
1 carton chicken broth

Broth Seasoning
Ginger paste
Rice vinegar
Sesame oil
Soy sauce
Chili crisp (for heat)

Garnish/Topping
Sesame seeds
Green onion, sliced

This recipe yields about 4 servings. 

Instructions:

1. In a large pot, heat your choice of oil over medium heat. Sauté the coleslaw mix, onion, and celery until slightly softened.

2. Add the minced garlic and cook for another minute or so until fragrant.

3. Add the ground pork and cook until browned and cooked through.

4. Pour in the chicken broth, then stir in the ginger paste, rice vinegar, sesame oil, soy sauce, and chili crisp. You don’t need much. I didn't measure, I just added in a few dashes of each. I went heavier on the ginger because I love that flavor. The chili crisp adds the best savory heat, but omit that if you don't like spicy. 

5. Let everything simmer together for about 15 minutes.

6. You can top it with sesame seeds and sliced green onions.

If you want to add more nutrients, you could substitute bone broth for the chicken broth. I also think some bok choy in this would be delicious. You could add rice for some carbs. You could even substitute the pork for the Trader Joe's mini cilantro wontons (one of my fave things to get at TJ's) to change it up!
